wheat, not meat at all! It seems then that the theory of dietary grains (especially wheat) causing joint inflammation is not only true for animals, but is also true in at least some humans. How does this relate to diabetics? First, pain causes stress. Stress increases your blood sugar. Increased blood sugar is the cause of most of the symptoms and secondary ailments that diabetics experience. Secondly, grains, especially these three, (wheat corn and rice) are high in carbohydrates. Regardless of the fiber and/or protein they may contain, the bottom line for the type II diabetic is that they contain a lot of carbohydrates. So minimize their use or eliminate them entirely, if you can. They can only get you in trouble. Every food you’ll ever eat will be turned into glucose, among other things, so you don’t have to specifically depend on having any grains in your diet for any particular reason provided you are getting sufficient amounts of fiber from other sources (which is very easy). The first category of foods at the broad base of the standard Food Pyramid

is complex carbohydrates, pasta, grains and cereals. It includes breads and anything made from any type of flour, pie and quiche crusts, pastries, corn chips, corn meal, rice cakes, brown rice and all cereals. In direct contrast to the Food Pyramid originators, I believe that the less of these grains, pasta and carbohydrates you eat as a type II diabetic, the better off you’ll be. Pasta is usually made from wheat, buckwheat, corn or other grains, or a combination of one or more of these things and other ingredients like spinach. But wheat is a major ingredient in making most pasta. They may be categorized as “complex carbohydrates,” but they are nonetheless carbohydrates and for most type II diabetics, will cause increased blood sugar levels. Cereals are also grains. Even the most health-promoting cereals usually contain wheat, rice and/or corn in some form. These are, after all, the main cereal grains. page 78
