“People’s bodies don’t read the books,” my instructors used to say, meaning that regardless of what’s in the books, people’s bodies are individual and simply can’t be generalized. What’s true in even a majority of cases may not be true for everybody. And if you’re one of the people for whom one of these assumed “truths” does not apply, it matters very little what others consider those generalized “truths” to be. The bottom line is that you must determine what YOUR body does with carbohydrates when it’s combined with fiber. If the “net” carb hypothesis actually works for you and helps you to control your own, personal blood sugar levels, by all means enjoy yourself. But you will never know if that’s the case if you don’t test it on your own metabolism. page 50
